More Inspired Summer Recipes from “Best Friends Inspire Health”

Here, the cancer fundraising Breast Friends from Saskatchewan cook up three more inspired summer recipes from their latest bestselling cookbook, Breast Friends Inspire Health. The book, which features more than 300 nutritious recipes, as well as health tips and a cancer prevention guide, highlights the importance of nutrition in cancer prevention, and the work of Vancouver’s pioneering non-profit integrative cancer care centre, InspireHealth.

Peach and Almond Salad

Ingredients

8 cups spinach, washed and trimmed

8 large mushrooms, sliced

¾ cup organic gruyere cheese, grated

1 cup red seedless grapes, sliced in half

1 ½ cups fresh peach slices

¼ cup almonds, toasted

1 cup plain organic yogurt

1 tablespoon raw apple cider vinegar

½ cup fresh squeezed orange juice

¼ teaspoon ground cinnamon

⅛ teaspoon cayenne or fresh ground pepper

 

Tear spinach into bite-size pieces. Add mushrooms, cheese, grapes, peach slices and almonds. In small mixing bowl blend yogurt, vinegar, juice, cinnamon and pepper. Just before you are ready to serve, toss salad with dressing.

Serve on chilled plates.

 

Best Black Bean Dip (pictured)

Simple and savoury.

Ingredients

1 -450 ml can black beans (Editor’s Note: look for beans in BPA-free cans, or substitute for packaged beans)

4 cloves garlic, minced or pressed

¾ teaspoon ground cumin

1 teaspoon chili powder

¼ cup Balsamic vinegar

Unrefined salt and pepper to taste

 

Combine all ingredients in a food processor and process until smooth. Some canned beans have more liquid then others, so you may have to drain some liquid off. Serve as a dip for veggies or pita chips. Makes 2 cups.

 

Fresh Beet Salad

1 cup beets (undercooked a little), grated

1 cup carrots, grated (unpeeled)

½ cup apple, grated

¼ cup green onion, finely chopped

¼ cup celery, finely chopped

1 teaspoon garlic, minced

1 teaspoon horseradish, minced

1 teaspoon unrefined/raw sugar

3 tablespoons cold-pressed (extra virgin) olive oil

2 tablespoons lemon juice

½ teaspoon unrefined salt

 

Mix all ingredients together gently, chill and serve. Keeps well for a few days in the fridge, so you can prepare ahead!
